PITHEY – our sweet pride. The variety of these sweet delicacies would startle one’s mind. This culinary craft is as old as our civilization itself. A sub-genre of medieval Bengali literature “Mangal Kabya” are full with account of sweet dishes, offered to the deities, include ashke pithe, kheer puli, dugdha puli, chusi pithe and many others. Different kind of this assortment – pan fried, steamed or boiled – common form include gokul, pati shapta, chitai pithe, ashke pithe, dudh puli, bhapa pithe … the list is endless. Primarily made from a batter of rice flour, optionally filled with grated coconut, kheer, cashews, pistachios sweetened with jaggery and garnished with cardamon or camphor. All through the centuries, the elegance of Pithey & Payas still remains among our most treasured culinary legacy steeped in nostalgia and sentimentality.
